Bacon Skillet Corn



I made this Bacon Skillet Corn to go perfectly with the Glazed Pork Chops I also made.


I started with can of corn, yep, a CAN of corn.


Next, I chopped up one whole green bell pepper and one whole yellow onion.


Of course, my little guy always steps in the help his mama out in the kitchen!


With the help of my little guy, the green peppers and onions were added to the corn. To corn mixture, I added about 1/2 teaspoon paprika, 1/2 teaspoon cayenne pepper and 1/2 teaspoon garlic salt. I mixed it all together and set aside.


I cooked 6 slices of bacon in the microwave. We have a bacon tray for the microwave. I cooked it as usual (3 minute increments until done with a paper towel over top to absorb some more grease).


After the bacon was done, I poured the bacon grease into a large skillet over medium/high heat added the corn mixture. I cooked until the onions were semi-transparent, stirring occasionally. Once finished, I crumbled the bacon and sprinkled over top of the corn mixture as I plated the corn.



Viola! Bacon Skillet Corn that was oh so yummy!
